How To Make Gluten Free Bread

Going gluten-free can be a healthy option for anyone, not just those with allergies. These days, it doesn’t mean going without your favourites, such as bread and cake. Just give this gluten-free bread a go.

To make one delicious gluten-free loaf you will need:

  • 40g golden linseeds
     
  • 100ml natural yoghurt
     
  • 450g cornflour
     
  • 475ml warm water
     
  • 1 sachet fast action yeast
     
  • 1tsp salt
     
  • 1tsp caster sugar
     
  • 50g psyllium husk powder
     
  • 50ml olive oil (plus extra to finish)
     
  1. Preheat the oven to 180C/gas 4.
     
  2. Bake the seeds on a tray for 10-12 minutes or until slightly darker.
     
  3. Mix the water and yeast in a bowl and then stir in the yoghurt and seeds.
     
  4. Combine the cornflour, salt, sugar and psyllium husk powder in a large mixing bowl and add the yeast mixture.
     
  5. Pour in the olive oil and stir well until it forms a smooth thin batter.
     
  6. After five minutes the liquid will turn into a sticky dough.  When the dough is firm enough, knead it for 10 seconds on the worktop, before returning it to the bowl.  Cover the mixture and leave for 30 minutes.
     
  7. Line a tray with non-stick baking paper.  Shape the dough into a wide line, the length of the tray and brush with olive oil.  Cover again and leave for a further 30 minutes.
     
  8. Whilst your bread is rising, preheat the oven to 240C/gas 9.
     
  9. Uncover the dough and score the top with a sharp knife.  Sprinkle with a little cornflour for a rustic look and bake for about 40 minutes, or until rich golden-brown in colour. 
     
  10. Leave to cool on a wire rack before slicing.
